Easy and Delicious Pasta Salad

I LOVE Pasta Salad and I finally made some. (:

Pasta Salad

It was delicious!! {Was meaning it’s gone now. Yep. That good.}

Here’s what you’ll need:
-Noodles {Rotini, Penne, spagetti}
-1 Bottle of Zesty Italian Dressing
-1 cup of Cherry Tomatoes
-1 Purple Onion
-1 Green Bell Pepper
-1 Cup Sliced Olives

{Note: Those veggies are just what I used in mine. They are all optional, depending on your liking. Of course, you can add lots of other things, too. I’ve seen it with yellow and red bell peppers, chunks of cheese, peas, etc.}

Here’s how to make it:

1 – Cook your noodles according to the directions on the package. In the ingredients list, I named several types of noodles. Just choose one. I’ve seen it done with all three of those noodles, that’s why I named them. I chose Rotini noodles.

2 – While your noodles are boiling, cut up all of your veggies in to bite size pieces. Put them in a large bowl when cut.

3 – After your noodles are done boiling and drained, mix noodles in with the veggies, along with the bottle of Zesty Italian Dressing.

4 – Stir and enjoy!

{Another note: it also tastes MUCH better when it’s cold, so after you stir it all together, put in in the fridge for an hour or two and then you’ll REALLY enjoy it!}

Cafe Rio Sweet Pork

One recipe that I love to make, is Cafe Rio Sweet Pork.

I make it because it doesn’t require a ton of effort from me and it’s DELICIOUS!!

Here is what you’ll need:

cafe rio sweet pork*Cheese
*Uncooked tortillas {My FAVORITE is Tortilla Land}
*Dr. Pepper
*Brown Sugar
*Salsa {I LOVE Wild Coyote}
*Pork loin
*Croc Pot

1 – Put your Pork Loin in the Croc Pot and let it stay in there for 3-4 hours if you need it quick {aka just thought about what you were going to make at 1 or 2 in the afternoon} or 6-7 hours if you start it in the morning.

2 – Check it every hour or so.. I usually flop mine on to the other side and start to cut it up, as I can. {If you put this in – in the morning and then go to work, it will be fine! Don’t worry about checking it hourly. I just do it so that I don’t have as much to cut up when it’s done.}

3 – About an hour before you are ready to eat it, shred it. I usually can just pull it apart with two forks without even having to remove it from the Croc Pot. {Make sure it’s cut up in order to do this}

4 – Add a can or cup {depending on how big your love for DP is!!!}, as well as a cup of Brown Sugar and a cup of salsa. You can also add black beans.

5 – Let sit for one more hour.

6 – When you are ready to eat, cook your tortillas according to the directions on the package.

7 – Add some cheese to the tortilla {I usually will cook one side, flip it over, then shred cheese on it while it’s still cooking in the pan so the cheesy is nice and melted.}

8 – Add some pork to the tortilla, along with whatever else your pretty little heart desires {lettuce, sour cream, rice, etc}, roll it up, and EAT!!

I’m tellin’ ya.. This stuff is GOOOOD!

My mom tells me I make it too much, but what does she know?

Chocolate Covered Ritz Cookies

I recently did a guest post over at Sugar Bee Crafts.

If you didn’t catch it, here is what I shared!!

Every year, around Christmas time, my mom and I would make these cookies. We’d make TONS and give them to friends, family, neighbors, teachers, etc. They’re always a huge hit. And it’s to the point where people expect them each year now and if we haven’t gotten them out by a certain time, they start asking haha!

Now, let’s get started on making these yummy cookies.

But one more thing.. You may want to put on an apron or some grungy clothes because things will probably get messy!

Here’s what you’ll need:

*Ritz crackers {go with the plain kind!}
*Creamy Peanut Butter
*Chocolate Almond Bark
*White Chocolate {or Vanilla} Almond Bark

Then take another cracker and make a sandwich out of it. Then set it aside.

Now you are going to take one of your chocolates and melt it. I usually do one or two squares at a time because it hardens pretty fast. Cook according to the directions on the back. I always do it in the microwave, but you have to be REALLY careful not to let it burn. You’ve got to keep your eye on it the whole time. When it burns, it STINKS and is no longer useable.

After you’ve melted some chocolate {in my case, I did the white first}, dip your cookie in and make sure it is completely covered, then set it on some wax paper or tinfoil. Continue doing this to all of your cookies using both the white and brown chocolate.

Now you’re going to make them look fancy. All you have to do is dip a spoon in some chocolate {the opposite color of the cookie} and wave your hand back and forth over it until it looks good. Then repeat with the other chocolate until they are all covered. And you’re done! I sometimes put them in the fridge to harden fast.

Before they dry, you could add other things as well or instead of doing the opposite chocolate. Things like sprinkles, M&M’s, and other small candies.

Like I said before, these are always huge hits with everyone!

Bundle them up on a cute holiday paper plate with some plastic wrap and tie it with a ribbon or make your own personalized plate to give them out on.

Fresh Lime

At Karsyn’s party, I needed a drink that would be good for everyone to drink, that wouldn’t stain clothes, and that was super easy and fast to make.

Fresh Lime!

Everyone loves fresh lime.

I borrowed my mother-in-laws drink fountain thing, got four 2 Liters of Sprite and 4 limes, and a 7 pound bag of ice.

I sliced each lime in to four pieces, then poured in the Sprite, then squeezed in each lime, added the ice, and put the lid on.

I didn’t mix it up or anything because it does that on it’s own pretty well.

It was a hit!

And for those little kiddies that happened to spill, it was fine. No stains, just sticky. (:

{Kade’s sister Ashlee, Grandma Lenna, and Mom Cindy sippin’ on some Fresh Lime.}

Fruit Cocktail

A few years ago, I went with Kade and his family up to Wolf Creek for the weekend. It’s this really nice, super small town. It was gorgeous up there! We stayed in some condo that was super nice, too.

While we were there, Kade’s mom made this YUMMY fruit cocktail salad and I instantly fell in love. I ate it every day while we were there.

Here’s the scoop:

1 tub of Whipped Cream
1 packet of French Vanilla Pudding
2 cans of Fruit Cocktail
2 bananas
2 apples
Any other fruit you want to add

Chop up your apples into bite-size pieces.

Combine the cans of cocktail, the apples, and slice in the bananas in a large bowl.

Then add your whipped cream. Stir until all the fruit is coated. Then pour some pudding mix in. I usually use about half or 3/4 the packet.. Just depending on your taste preferences.

Then scoop up and enjoy!!

P.S. It’s good to eat right then and there, but it’s best when refrigerated.

Homemade Oreos

This is one of my all time favorite recipes! I may or may not eat Oreos and Milk for at least two of my meals each day………………………… I digress..

Here’s what you’ll need:
Oreo Cookie Part
*2 Packages of Devil’s Food Cake
*1 cup of Canola Oil
*4 eggs
Filling
*8 ounce package of Cream Cheese, soft
*1/4 cup butter, soft
*2 1/2 cup Powdered Sugar
*1 tsp Vanilla

In a large bowl, mix the cake mixes, oil, and eggs until well blended.

Roll into 1 inch balls.

Place them on a greased cookie sheet.

Bake at 350 for 8 minutes. Let cool for at least 5 minutes.

In a small bowl, beat the cream cheese and butter until fluffy. Beat in powdered sugar and vanilla until smooth.

Spread some of the filling on one side of the cookie, then place the other cookie on top!

And there you have a very simple and DELICIOUS recipe for homemade Oreos.

Dorito Chicken

This recipe was inspired by this one, but I kind of tweeked it a little!

You will need:

2 c. shredded cooked chicken, chopped
1 c. shredded cheese
1 can cream of chicken soup
1/2 cup milk
1/2 cup sour cream
1/2 packet taco seasoning
Bag of doritos {normal size, not the snack size}

1. Pre-heat oven to 350-f degrees.

2. In a mixing bowl, combine all ingredients except doritos.

3. Grease your pan, spread a layer of crushed Doritos, then add a layer of the chicken mixture on top. Repeat once more, ending with a layer of chicken mixture. Sprinkle shredded cheese on top bake for 30-35 minutes.

Pizza Roll-Ups

Here is another SUPER EASY and QUICK recipe! They are also SO delish!! Yummmm!


What you will need:
*8 Cresent Rolls
*4 string cheese
*About 32 pepperoni slices

Heat your oven according to the directions on the cresent roll package. {Mine was 375.}


Open each cresent roll and place 4 pepperoni slices on each. As you can see, I did two on top and two down the middle. Then tear a string cheese in half and place it at the top of the roll.


The roll up the little babies! You don’t have to seal all the cracks this time. Then cook according to your cresent roll packages. {I did 12 minutes.}


Once they are done, eat them up!!! You can dip them in something yummy, like ranch or marinara if you like it!
